Head of Beverage - Kingham
The Head of Beverage has overall strategic responsibility for the Bar, beverage and wine operation including drinks selection, service, stock control and GP.
Managing a very prestigious wine list and Sommelier team that will be masters of their sector, you will lead a luxury beverage outlet, mixologists, and bar team in a fine dining setting.
SALARY: £40,000 per annum, plus tronc
HOURS: FULLTIME – 48 HOURS

RESPONSIBILITIES
SERVICE
- To champion agreed steps of service at all times and set example for the Bar team
- To be present to be on service and take a hands-on approach to both service and coaching of the team
- To have good telephone manners and be fully proficient in the use of the reservation system To keep a constant attentive eye to the timing and flow of service at the bar tables
- To constantly seek to proactively assist guests in the bar seated area, without waiting for them to stand up and seek for help
- To anticipate all possible complaints and attempt to resolve them in the first instance – Report/escalate any potential issues or complaints to the Manager on duty
OPERATIONS
- To ensure that all work areas & equipment is kept in good condition and report/resolve any issues
- To ensure, alongside the Sommelier and head bartender, that the beer & wine cellar is maintained; all beverage is to be secured and kept in the correct conditions, pricing correct and up to date, ensure pairings and specials are cost effective and in line with GPs
- To delegate daily tasks to Head Bartender and Bartenders To ensure the Bverage team are always motivated and on task
- To highlight H&S matters to your line manager
- To deliver and champion The Wild Rabbit standards
PEOPLE/PERSONAL
- Produce all bar and beverage team rotas and work with the Restaurant Manager to resolve any rota or staff issues
- Line management of the bar team and sommelier team (incl holidays, absences, performance reviews etc) Maintaining accurate rotas and staff records on Fourth
- Where necessary, be actively involved in the recruitment of new staff to be proactive in assisting your team member colleagues
- To activity share knowledge of your subject
- To be reliable and punctual on shift
- To ensure all mandatory and legal training is complete and up to date; and refreshers completed prior to the expiry date
- To attend training courses when requested
SKILLS YOU WILL BRING
- Proven experience in beverage management, hospitality, or a similar field.
- Extensive knowledge of alcoholic and non-alcoholic beverages, including cocktails, wine, coffee, tea, and mocktails.
- Strong leadership and team management skills, with the ability to inspire and mentor the team.
- Exceptional organisational, problem-solving, and decision-making abilities.
- Excellent communication and interpersonal skills.
- Ability to work under pressure in a fast-paced environment.
- Strong business acumen, including budgeting and cost management.
- A passion for customer service and a deep understanding of consumer trends
EDUCATION AND EXPERIENCE
- Certification or training in mixology, wine, or related beverage fields is a plus. WSET Level 3 certification a must plus extensive experience in other beverage fields.
- 5 + years’ experience in the beverage industry.
