Operations Winemaker (Maternity Cover) – Kent

Defined Wine Ltd is seeking maternity cover for their Operations Winemaker. There is a strong possibility of a follow-on, permanent winemaking role within the company.

Defined Wine Ltd has been set up as a contract-only winery, with no vines or brands of its own. Its focus is therefore solely on supporting clients, whether they be small growers who want a full “crate to case” service, or larger clients who want any part of this: pressing, winemaking, bottling, riddling and disgorging or labelling. We are based near Canterbury, Kent (CT4 5HL).

Dates: Immediately to end of maternity period

Hours: Forty hours per week outside harvest, up to 70 hours per week during the peak of harvest (four-week period from middle of September to middle of October).

ACTIVITIES

 Winemaking operations

·        Write and complete cellar notes on winery software (VinTrace) in accordance with winemaking plans and requests from Head Winemaker

·        Ensure the preparation of wines for bottling and tirage

·        Manage and coordinate the reporting of internal and contract laboratory analysis

·        Ensure compliance of wastewater

·        Manage and direct Cellar Supervisor so as to ensure timely and qualitative production of all wines for blending, tasting, dispatch, stabilisation, bottling

·        Ensure wines are made in accordance with the clients winemaking requests

·        Track blending trials and decisions with clients and co-ordinate their preparation with both the cellar and the laboratory

Harvest

·        Coordinate staffing and shift requirements for the harvest period

·        Direct and coordinate all tasks associated with grape receival, pressing and cellar operations

·        Write and complete all cellar notes on Vintrace winery software

·        Lead harvest induction and ensure sufficient training is provided for all new cellar staff

Production

·        Write and update all cellar notes for production activities: bottling, disgorging, tirage 

·        Coordinate quality control of wine parameters between production and laboratory 

·        Input and update status of wines for bottling and disgorging on relevant software 

 Candidates must have:

–   A winemaking qualification and/or experience as an Assistant Winemaker

–   Competence in a broad range of winery duties

–   Hold a driving license and a proficiency certificate for forklift operation

–   Computer skills to manage winery records, stock management and all winemaking administration

–   Flexibility to work extended hours when necessary

–   Eligibility to work in the UK

–   The ability to lift up to 25kg
