Chef de Partie – West Sussex
We are looking for an individual to enable the vision of the Estate through the compassionate leadership of the team, preparation and execution of excellent food and challenging the status quo to drive success
Responsibilities
- To assist in developing and maintaining a happy, motivated, high performing team
- To assist in coaching, learning and development across the team
- To deliver an ‘on Brand’ food offering, ensuring reflection of the Estate values, seasonality and link to the land
- To engage with the wider Estate team in the delivery of events
- Ensure HGEM mystery diner reports achieve target (90%) scores
- To help deliver the kitchen gross profit targets by assisting the head chef with dish specs and costing and ensuring best price for produce & reducing waste.
- To work with the head chef in the delivery of the restaurant budget and target GP of 71%
- To ensure compliance with all standard operating procedures
- To ensure accurate ordering and minimise waste
- To ensure the cleanliness of the kitchen is maintained and the kitchen operates to 5* EHO compliance
- To assist the head chef in ensuring legal compliance and operating standards across the kitchen through use of Risk Proof and reference to FHMS
