About the Role
The Director of Food & Beverage functions as the Business Manager and Marketing Specialist for the Food, Beverage and Kitchens Division, and ensures that all the outlets and events operate successfully, in accordance with the standard of the hotel and are individually profitable. This role will be responsible for driving the vision of the division and creating exceptional programming, partnerships, experiences and pop-ups throughout the year. The Director of Food and Beverage will oversee the daily operations of the food and beverage department, ensuring that all activities align with the company’s standards for quality, service, and Relationship Hospitality.
Key Responsibilities
- Ensures that the Food and Beverage activities are aligned with the respective corporate strategy, and that the hotel actions have been implemented where appropriate.
- Lead the management and coordination of all food and beverage operations, ensuring quality and service standards are met.
- Oversee the day-to-day functioning of the restaurants, bars, event operations, in-room dining, and any other food and beverage outlets within the property.
- Maximises associate productivity through the use of multi-skilling, multi-tasking and flexible scheduling to meet the financial goals of the business as well as the expectations of the guests.
- Analyses business performance strategically to facilitate accurate and meaningful forecasting, involving the respective Department Heads as appropriate.
- Assist in recruiting, training, and managing the food and beverage team, fostering a positive and collaborative work environment.
- Conduct performance appraisals, provide feedback, and develop team members to achieve their full potential.
- Be responsible for managing labour costs within budget across the function
- Assist in preparing and managing budgets for the food and beverage department.
- Ensure a high standard of guest service, addressing and resolving any complaints or issues promptly and professionally.
- Develop and maintain strong relationships with guests, ensuring their needs and preferences are anticipated and met.
- Assist in developing and implementing strategies to improve operational efficiencies, in-crease revenue, and enhance guest satisfaction.
- Curate, plan and execute promotional activities and special events.
- Prepares, utilises and updates an Annual Marketing Plan, broken down as necessary by de-apartment.
- Evaluates local, national and international market trends, vendors and other hotel/restaurant operations constantly to make sure that the hotel’s own operations remain competitive and cutting edge.
- Act as a “Brand Ambassador” and ensure brand integrity and clarity are always maintained.
- Model the Company’s culture, vision, mission and core values.
About You
- At least 2 years’ experience within a similar role
- Exposure to developing innovative food and beverage concepts.
- Strong financial management and commercial acumen
- Proven leader who can coach, guide and build a high performing team
- Demonstrated experience in driving performance and operational excellence.
- Preferably you’ll have had expose of experience of being part of a pre-opening team.
